    Raspberry and pistachio are having a moment everywhere from cheesecakes to tarts, and this berry-and-nut pairing works just as well folded into a muffin. These sourdough raspberry pistachio muffins use up your discard and come together without much effort.

    The batter is built on oil rather than butter, so it stays moist for days. Fresh raspberries burst against toasted, salty-sweet pistachios, and you get to choose how to finish them: a shiny pistachio glaze or a crunchy pistachio streusel. I've tested both. Neither is wrong, but do not do both at once.

    Why Sourdough Discard Works Here

    You don't need an active, bubbly starter for this one, which is exactly the point. Sourdough discard, the unfed starter you'd otherwise discard, adds a gentle tang that balances the sweetness of the raspberries and rounds out the pistachio.

    Baking powder and bicarbonate of soda do the actual lifting here, so the discard is there for flavour and moisture rather than fermentation. This also means active starter works just as well if that's what's bubbling on your counter instead of discard. Some bakers assume active sourdough starter is reserved for long-fermented loaves, but here it's simply another route to the tang (although slightly less) and moisture.

    Ingredient Notes

    • Sourdough discard: unfed and straight from the fridge is fine. It doesn't need to be bubbly or recently topped up.
    • Vegetable oil: this is what keeps the crumb tender days later. Vegetable oil or sunflower oil both work, and either firms up far less than butter as the muffins cool, which is why these hold up better than a creamed-butter muffin for lunchboxes or make-ahead breakfasts.
    • Raspberries: to prevent raspberries from sinking, you can use an extra tip to toss them with flour. Arrange them in a single layer on a plate and freeze them for 20 minutes before coating in flour.
    • Pistachios: shelled and unsalted gives you control over the finished sweetness, and they bring a distinct crunch and texture that the streusel or glaze alone can't. Salted work in a pinch; just don't add extra salt to the glaze.
    • The tablespoon (1 tbsp) of flour for tossing: this isn't optional fuss. It stops the raspberries and pistachios from sinking to the bottom of the tin and limits how much raspberry juice streaks through the batter.

    Step-By-Step Method

    Streusel, if using

    1. Mix the flour, brown sugar and salt in a bowl.
    2. Rub in the cold butter with your fingertips until it looks like coarse breadcrumbs.
    3. Stir through the chopped pistachios and set aside.

    Batter

    1. Preheat the oven to 200°C (400°F) and line a 12-hole muffin tin (or muffin pan) with muffin liners (paper liners work best).
    2. Whisk the plain flour (all-purpose flour), baking powder, bicarbonate of soda (baking soda) and salt together in a large mixing bowl. Stir through the chopped pistachios.
    3. First, combine the sourdough discard and milk, whisking until a cohesive, thin batter forms. Add the sugar, eggs and vanilla and whisk until combined.
    4. Drizzle in the oil while whisking, until fully incorporated. The batter should look glossy and slightly thickened, not split.
    5. Fold the wet ingredients into the dry ones gently, just until no streaks of flour remain. Overmixing here changes the texture, giving you a tough, peaked muffin instead of a tender one, so stop as soon as it looks combined.

    Fold in and bake

    1. Toss the raspberries in the tablespoon of flour, then fold them through in as few strokes as possible. Alternatively, you can keep the raspberries and press 2-3 of them on top of the muffins once the batter is in the muffin tin.
    2. Divide the batter between the muffin liners. Top with streusel if using, pressing down lightly so it sticks.

    1. Bake for 20 to 22 minutes, until a cocktail stick (or toothpick) inserted into the centre comes out clean.
    2. Cool in the tin for 5 minutes, then move to a wire rack to cool completely.

    Glaze, if using

    1. In a separate bowl, whisk the icing sugar, milk and ground pistachio to a thick, smooth paste with no lumps.
    2. Muffins must be completely cool before glazing, or it slides straight off. Drizzle over and scatter with extra chopped pistachio before it sets.

    Tips For Best Results

    🌡️ Bring the large eggs and milk to room temperature first. Cold ingredients hitting the oil can make the batter look slightly split rather than glossy, which affects how evenly it bakes.

    🥄 Stop mixing the moment the flour streaks disappear. This is an oil-based batter, so it's more forgiving than a creamed one, but overworking it still toughens the crumb.

    🍇 Don't skip the flour toss for the fruit. It's the difference between an even texture and a muffin with all the raspberries sitting on the bottom. To prevent the sinking further, arrange the raspberries in a single layer on a plate, freeze them for 20 minutes, then toss in flour.     🌰 Toast the pistachios first if you have five minutes. Five minutes at 160°C before chopping deepens the flavour noticeably.

    ❄️ Let muffins cool fully before glazing. Warm muffins melt the glaze straight off, which is a waste of good pistachio.

    🎯 Pick one topping, not both. Streusel gives crunch and a rustic look, glaze gives shine and a cleaner bakery finish. Both together is one topping too many.

    Serving Suggestions

    These are best served slightly warm with strong coffee or tea, though they hold up well cold too. Streusel-topped muffins make a sturdy lunchbox snack since there's no glaze to smear. Glazed ones look the part on an afternoon tea plate if you want something a bit more finished for guests.

    Storage

    Store in an airtight container at room temperature for up to 3 days if streusel-topped, or 2 days if glazed, since the glaze softens with time. In humid weather, they'll keep a day longer in the fridge, though the glaze may lose some shine.

    For longer storage, wrap the muffins individually in cling film (plastic wrap) and freeze unglazed and without streusel for up to 3 months. Thaw at room temperature, then glaze fresh or top with streusel and warm through in the oven before serving.

    Recipe FAQs

    Can I use active sourdough starter instead of discard?

    Yes. Since baking powder and bicarbonate of soda do the rising here, an active, unfed, or even slightly sour starter all work equally well. Use whichever you have on hand.

    Do I have to toast the pistachios first?

    No, raw chopped pistachios work fine and the muffins will still taste good. Toasting them for 5 minutes at 160°C before chopping deepens the flavour, so it's worth doing if you have the time, but it isn't essential.

    Why does this recipe use oil instead of butter?

    Oil keeps the crumb soft and tender for several days, whereas butter-based batters firm up as they cool. That's why the streusel topping, which does use butter, is there to bring back a buttery contrast that the batter itself doesn't have.     Can I make the batter ahead of time?

    It's best mixed and baked the same day. Because the leavening is baking powder and bicarbonate of soda rather than a slow ferment, the batter won't benefit from resting and may lose some rise if left too long before baking.

    Can I swap the pistachios for a different nut?

    Yes, flaked almonds with a drop of almond extract work well for a Bakewell-style version, and desiccated coconut is another good swap in both the batter and the glaze.

    • 190 g (1½ cups) plain flour all-purpose flour
    • 1½ teaspoon baking powder
    • ¼ teaspoon baking soda
    • ½ teaspoon salt
    • 120 g (scant 1 cup) granulated sugar
    • 100 g (½ cup) sourdough discard 100% hydration
    • 120 g (½ cup) vegetable or sunflower oil
    • 100 g (½ cup) milk
    • 2 eggs large
    • 1 teaspoon vanilla extract or vanilla bean paste
    • 150 g (1 cup) fresh raspberries
    • 60 g (½ cup) shelled pistachios roughly chopped
    • 1 tablespoon plain (all-purpose) flour for tossing the raspberries

    Optional Pistachio Streusel

    • 60 g (½ cup) plain flour all-purpose flour
    • 60 g (¼ cup) light brown sugar
    • pinch of salt
    • 45 g (3 tablespoon) cold butter cubed
    • 30 g (¼ cup) pistachio kernels chopped

    Optional Pistachio Glaze

    • 100 g (¾ cup) powdered sugar icing sugar
    • 1-2 tablespoon milk
    • 2 tablespoon finely ground pistachio blitz a small handful in a coffee grinder or mini processor
    • extra chopped pistachio to finish
