    Savoury Galettes With Sourdough Twist

    Sourdough pastry is a perfect match for savoury galettes - it's flaky, flavoursome, and easy to work with. We use our versatile sourdough pie crust recipe for both sweet and savoury galettes, letting the naturally fermented flour from the discard add depth and character to every bite.

    The rustic look of a galette, with its folded pastry edge, is part of the charm, and with sourdough, it tastes just as good as it looks.

    Ingredient Notes

    Here are all the simple ingredients you will need to make this Courgette Galette:

    • unsalted butter: cold butter makes the best flaky pastry, so ideally you will want to freeze your butter 1 hour before making sourdough pastry. 
    • plain flour: also known as all-purpose flour.
    • salt. 
    • sugar: optional, but it helps with the browning of the pastry. 
    • sourdough discard: 100% hydration, fridge cold. 
    • cold water.

    • cream cheese: or use ricotta cheese or other creamy cheese. You can even get away with grated parmesan mixed with sour cream or crème fraiche.  
    • garlic cloves: minced. 
    • lemon juice: you can add lemon zest to the cheese mixture as well. 
    • a pinch of salt and black pepper: to taste. 
    • red onion: thinly sliced.

    • hot honey: is used as an optional drizzle (we use it in our Hot Honey Sourdough Focaccia too). You can also use balsamic vinegar reduction or nothing at all.

    I have also sprinkled the edges of the pastry with nigella seeds on this occasion.

    Tips For The Best Sourdough Pastry 

    Whether it's your first time making galette-style pastry or you're a seasoned baker, these tips will help you get the best results every time:

    • Start cold: Use cold ingredients - frozen butter, cold water, and even a chilled mixing bowl if your kitchen is warm. This helps keep the butter from melting into the flour mixture, which is key for flakiness.
    • Weigh it out: Use a kitchen scale to measure ingredients accurately. Pastry is one place where precision really matters.
    • Chill the dough: After the dough forms, wrap it tightly in plastic wrap (cling film) and let it rest as chilled dough for at least 4 hours or overnight. This helps gluten relax and improves texture.

    • Roll smart: Roll your pastry on a lightly floured surface, ideally directly on parchment paper cut to the size of your tray. This way, there's no stressful transfer once it's rolled out.

    • Why add sugar? Even a little helps create a beautifully golden brown crust and adds balance to savoury fillings. Totally optional, but highly recommended.
    • Egg wash options: Brush the edges with beaten egg or egg yolk (egg wash) or even a bit of milk for extra shine and colour.
    • Don't overwork it: Handle the dough gently once the flour mixture and liquids are combined. Overmixing will toughen it.
    • Chill again if needed: If your pastry dough gets soft while shaping or assembling, pop it back in the fridge for 15-20 minutes before baking to preserve those flaky layers.

    Storage and Reheating

    This courgette galette is best enjoyed fresh, but leftovers will keep well. Cool any remaining slices to room temperature and then store them in an airtight container in the fridge for up to 3 days.

    To reheat, pop the galette into a preheated oven at 180°C (350°F) for about 8-10 minutes, or until warmed through and the crust crisps back up. Avoid the microwave - it softens that lovely flaky pastry.

    Courgette Galette With Sourdough Pastry

    Ingredients
     

    • 160 g (5.64 oz) unsalted butter frozen
    • 250 g (2 cups) plain flour all-purpose flour
    • ½ teaspoon salt
    • 1 tablespoon sugar optional
    • 100 g (½ cup) sourdough discard 100% hydration, fridge cold
    • 3-5 tablespoon cold water

    Topping:

    • 200 g (7 oz) cream cheese
    • 3 garlic cloves minced
    • 1 tablespoon lemon juice
    • salt and pepper to taste
    • 1 red onion thinly slices
    • 400 g (0.88 lb) courgettes (zucchini) thinly sliced
    • 1 tablespoon hot honey optional

    Instructions
     

    Sourdough Pastry:

    • Weigh out and place the butter in the freezer 1 hour before you start making the pastry. When the butter is frozen, start mixing your dry ingredients.
    • In a large mixing bowl, place the flour, salt and sugar, if using, and mix to combine. Coarsely grate your frozen butter into the flour mixture and toss together to coat the butter pieces.
    • In a separate bowl, whisk together the sourdough discard with three tablespoons of ice water (reserve the rest of the water for later, should your dough be a bit too dry).
    • Add the sourdough mixture to the flour and, using a blunt knife or a fork, work it in to form a dough. If your pastry is too dry, add a little water (1 teaspoon at a time) and knead just enough to bring the pastry dough together.
    • Flatten the pastry, wrap it tightly in cling wrap and chill for 4 hours (or overnight).

    Courgette Galette:

    • In the meantime, mix the cream cheese, lemon juice, minced garlic and salt and pepper in a small bowl.
    • Preheat the oven to 190°C (375°F).
    • On a large sheet of parchment paper dusted with flour, roll the chilled pastry out into a rough circle, measuring about 35cm in diameter (about 2-3mm thick).
    • Spread the cream cheese mixture on the pastry, leaving about 5cm (2in) edge.
    • Scatter sliced onions on top of the cream cheese.
    • Arrange the sliced courgette, overlapping slightly, all over the filling. Season with extra salt and black pepper.
    • Fold the sides of the sourdough pastry over the filling and brush with a little milk or egg wash (optional).
    • Slice the parchment paper with the galette onto a baking sheet, and bake for 35-40 minutes.
    • Leave the galette to cool down and firm up for 10 minutes before drizzling some hot honey over and slicing.

        I don't have any sourdough discard because I have not yet made my own sourdough bread.

          Hi, Karey! You can buy sourdough starter online (even on Amazon) or sometimes from a local sourdough bakery.

          But if you wish, you can make your own sourdough starter from scratch. Here's an article about how to make it: https://somebodyfeedseb.com/sourdough-starter/

          One thing to note is that it takes time. You need at least 2 weeks of regular feeding before you can use it for bread or any bakes where it acts as a leavening agent. You can use discard after about 1 week. Having said that, this galette will work beautifully with a regular flaky pastry if you'd like to try it before your sourdough starter is ready! 🙂
