- Sourdough discard: Use 100% hydration discard (equal parts flour and water). It doesn't need to be bubbly - room temperature or straight from the fridge both work. But active starter will work just fine too.

Sourdough Courgette Fritters
Ingredients
- 100 g (½ cup) sourdough discard 100% hydration
- 1 egg large
- ¼ teaspoon garlic powder
- 50 g (½ cup) plain flour
- 350 g (0.77 lb) courgettes weighed after grating and squeezing out moisture (~500g whole courgettes)
- 50 g (½ cup) cheddar or parmesan, grated
- 2 spring onions / green onions thinly sliced
- salt and pepper to taste
- oil for frying
Instructions
- Coarsely grate the courgettes. Place them in a clean kitchen towel, and squeeze as much moisture out as possible.
- Add the grated cheese, spring onions and season with salt and pepper.
- In a large mixing bowl, mix sourdough starter, egg, garlic powder and flour.
- Mix the batter with the courgettes well to combine. It will be thick.
- Heat oil in a large frying pan over medium heat.
- Add large tablespoons of the fritter mixture to the pan and press them down to flatten. Fry for 3-4 minutes on each side.
- Once cooked, transfer them onto a plate lined with paper towels to absorb excess fat. Keep the fritters warm in the oven whilst you work through the batter.
