    Ingredients and Substitutes

    Here are all the basic ingredients you will need to make these Garlic Roasted Green Beans: 

    • fresh green beans: trimmed.
    • garlic cloves: we don't recommend substituting fresh garlic with garlic powder in this recipe. 
    • extra virgin olive oil. 
    • lemon: we will use both zest and juice. 
    • salt and black pepper. 
    • flaked almonds (or slivered almonds): pine nuts, hazelnuts and pecan nuts also work well. If you cannot eat nuts, try this recipe with toasted pumpkin seeds or even crispy bacon bits. 
    • Parmesan cheese: or any other hard Italian cheese. For a Greek twist, try crumbling some feta cheese on top instead.

    Step-By-Step Recipe

    1. Preheat the oven to 200°C. Line a large baking tray with parchment paper or foil.

    2. Place the trimmed green beans, sliced garlic, olive oil, half of the lemon zest, salt and pepper in a large bowl and toss to combine.

    3. Spread the beans in a single layer on a prepared baking sheet, and place it in the oven for 12-15 minutes, stirring them midway through. Cooking time will vary depending on the size of your green beans, but they should brown slightly, soften, but retain a little texture. 

    4. In the meantime, toast the flaked almonds in a small dry pan until slightly browned and smelling nutty.

    5. Once cooked, discard the garlic pieces, squeeze lemon juice on top, scatter the remaining lemon zest, toasted almonds and parmesan on top and serve.

    Serving Suggestions

    These garlic green beans are an easy side dish that's just as tasty served hot or at room temperature. It's a delicious way to elevate any main dish - from roast chicken, coconut crusted chicken breast and pistachio crusted cod (or coconut crusted fish) to doubling as a chilled green bean salad the next day (we love mixing them with spinach, fresh herbs and lemon Dijon salad dressing).

    Storage

    Store any leftover Garlic Roasted Green Beans in an airtight container in the fridge for up to 3 days. They're easy to reheat in a pan or enjoy cold in salads for a fuss-free lunch.

    Recipe Tips and FAQs

    • Can I use frozen green beans? Yes, but for best results, thaw and pat them dry first - frozen green beans can release water, leading to steaming instead of roasting.
    • Give the beans room to roast. Avoid overcrowding - little space between the beans helps them crisp, not steam.
    • Making a double batch? Use two trays to ensure even roasting when cooking a double batch.
    • Want more caramelisation? Add a pinch of sugar when tossing the beans with garlic and olive oil.
    • Do I need to trim green beans? Yes-snip off the stem end using kitchen scissors or a sharp knife for better texture and presentation.

      We had friends round and this went down a storm (for me, as cook, as well as them). It's so easy to put together chicken comes out moist and tender and the whole thing delivers big time on taste. Accompanied with the recommended roasted green beans and new potatoes dug from the garden it was a delicious meal.
