Ingredients and Substitutes
Here's everything you'll need for this cabbage steak recipe:
- cabbage: we used a small white cabbage, but green cabbage works just as well (and cooks a little quicker). Cut the cabbage into 2.5cm steaks, and use the centre slices that are held together by the root end).
- olive oil: may be replaced with avocado oil or cold-pressed rapeseed oil.
- garlic cloves: may be replaced with ½ teaspoon of garlic powder.
- salt.
- spices: we used paprika and turmeric, but you may experiment with smoked paprika, cumin and baharat - we loved all these flavours with cabbage.
- parmesan cheese: or another hard Italian cheese.

Step-By-Step Method
1. Preheat the oven to 220°C. Line a large baking tray with parchment paper.
How To Cut Cabbage For Cabbage Steaks?
To prepare cabbage steaks, start by removing any tough or damaged outer leaves. Place the cabbage on a cutting board, stem-side down. Using a sharp knife, cut the cabbage vertically through the core into thick slices, about ¾ inch (2cm). Use the middle part of the cabbage, where the core helps hold the slices together. Set aside the outer sides for another recipe, as they won't hold together as well.

2. In a small bowl, mix the olive oil, minced garlic, salt, paprika and turmeric. Brush both sides of the cabbage steaks with this mixture. At this point, you can place these thick cabbage slices into an airtight container and store them in the fridge for up to 1 day until you're ready to cook, or you can roast them immediately.

3. Divide the grated parmesan into piles on the prepared baking sheet, spreading the parmesan out into a circle of a similar size to your cabbage steaks.

4. Place cabbage steaks on top of the cheese and place them in the preheated oven for 25 minutes. When cooked, your cabbage should be tender and the cheese should be brown and crispy on the bottom.

- Grind a little bit of black pepper or add a pinch of red pepper flakes on top!

We typically serve cabbage steaks as a main dish, with a couple of side dishes to make it into a full meal. We love some silky smooth mashed potatoes or creamy polenta as well as a fresh vegetable side, like courgette ribbon salad, pea shoot salad, balsamic green beans and cherry tomatoes or garlic roasted green beans.
