Tips & Tricks for Making Perfect Blinis for Canapes
Homemade sweet corn blinis are extremely easy to make. It’s essentially a pancake batter with some spring onion, sweetcorn and chilli powder. The trick is not to overcook the blini – since we are using less than a teaspoon of the mixture per blini, it may be difficult to spoon them all out into the pan without having to flip the first ones in. We suggest cooking them in batches, not overcrowding the pan and stressing yourself out!
Furthermore, you can add more or less flavour to them, depending on your won individual tastebuds. We love sweet corn blinis with spring onion and a pinch of chilli powder, but feel free to substitute the onion with parsley, coriander, chives or dill. Chilli powder can be replaced with paprika, turmeric or omitted altogether.

Step-By-Step Recipe:
How to Make Sweet Corn Blinis?
In a bowl, beat the egg and milk together. Mix in the flour and chilli powder and season with salt and pepper. Make sure there are no pockets of dry flour remaining in the mixture. Add the sweetcorn and spring onion.
Heat 2 tablespoon of oil in a large non-stick frying pan. Once hot, add a small teaspoon of the sweetcorn mixture to the pan per blini. Fry for a minute on each side, then transfer to a plate lined with a paper towel to remove any excess oil.



Assemble the Smoked Salmon Canapes
Roll strips of smoked salmon to form little flowers and place them onto the sweet corn blinis. Pipe cream cheese into the centre of each smoked salmon roll.
Cut each lemon slice into small segments, and cut the zest off (you may keep it but the bitterness of it may overpower other flavours). Add a small piece of lemon to each canape. Decorate with some spring onions, chive or fresh dill, if you wish.
