    Cabbage Takes The Spotlight

Move over, cauliflower steaks - cabbage is here to shine! If you're a fan of cabbage, you'll love how the hearty core holds up beautifully when roasted, making it the best way to enjoy thick, caramelized cabbage steaks. With its natural sweetness and tender-crisp texture, cabbage takes centre stage in a dish that's simple yet full of flavour.

    Ingredients and Substitutes

Here's everything you'll need for this cabbage steak recipe:

    • cabbage: we used a small white cabbage, but green cabbage works just as well (and cooks a little quicker). Cut the cabbage into 2.5cm steaks, and use the centre slices that are held together by the root end).
    • olive oil: may be replaced with avocado oil or cold-pressed rapeseed oil.
    • garlic cloves: may be replaced with ½ teaspoon of garlic powder.
    • salt.
    • spices: we used paprika and turmeric, but you may experiment with smoked paprika, cumin and baharat - we loved all these flavours with cabbage.
    • parmesan cheese: or another hard Italian cheese.

Find the ingredient quantities, complete recipe and nutritional values on the recipe card at the bottom of the post.

    Step-By-Step Method

    1. Preheat the oven to 220°C. Line a large baking tray with parchment paper.

How To Cut Cabbage For Cabbage Steaks?

To prepare cabbage steaks, start by removing any tough or damaged outer leaves. Place the cabbage on a cutting board, stem-side down. Using a sharp knife, cut the cabbage vertically through the core into thick slices, about ¾ inch (2cm). Use the middle part of the cabbage, where the core helps hold the slices together. Set aside the outer sides for another recipe, as they won't hold together as well.

Four cabbage slices cut through the core on a kitchen surface.

    2. In a small bowl, mix the olive oil, minced garlic, salt, paprika and turmeric. Brush both sides of the cabbage steaks with this mixture. At this point, you can place these thick cabbage slices into an airtight container and store them in the fridge for up to 1 day until you're ready to cook, or you can roast them immediately.

    3. Divide the grated parmesan into piles on the prepared baking sheet, spreading the parmesan out into a circle of a similar size to your cabbage steaks.

    4. Place cabbage steaks on top of the cheese and place them in the preheated oven for 25 minutes. When cooked, your cabbage should be tender and the cheese should be brown and crispy on the bottom.

    Toppings

    • Grind a little bit of black pepper or add a pinch of red pepper flakes on top!
    • A drizzle of balsamic vinegar or balsamic glaze complements the natural sweetness of the cabbage.
    • Scatter some fresh herbs (we love fresh parsley) or spring onion on top and serve!
    • Crunchy toppings, like crispy bacon or toasted pecan nuts, work beautifully too and complement the texture of the cabbage.

What To Serve With Cabbage Steaks?

We typically serve cabbage steaks as a main dish, with a couple of side dishes to make it into a full meal. We love some silky smooth mashed potatoes or creamy polenta as well as a fresh vegetable side, like courgette ribbon salad, pea shoot salad, balsamic green beans and cherry tomatoes or garlic roasted green beans.

These parmesan cabbage steaks also make a delicious side dish that works particularly well with pork (we love them with our French Pork Tenderloin). But they're also great with chicken and even as a side to your Sunday Roast!

    Recipe FAQs

What Can I Do With Leftover Cabbage?

You will not need the whole cabbage, and will likely be left with the edges of loose leaves. Use them to make a cabbage slaw or cook them in vegetable broth with extra veggies to make a delicious cabbage soup. What is more, you can make a cabbage stir fry, creamy cabbage pasta or cabbage risotto with bacon!

Can Cooked Cabbage Steaks Be Frozen And Reheated?

Technically, yes, but because this particular recipe is roasted with cheese, we do not recommend freezing them. This recipe is best served freshly made.

Hi, I am Ieva – the cook and baker in our North Wales home. I share my life with my husband Seb, who doubles as my number-one taste tester, our golden retriever Sawyer, who’s always on crumb patrol and multiple sourdough starters. My days revolve around food—whether I’m experimenting with new recipes, tending to my veggie garden, or sneaking bites of “taste tests” (quality control, of course). Cooking isn’t just a passion; it’s my way of keeping Seb from reaching ‘hangry’ levels! Somebody HAS to feed Seb…
