    Apricot & Pecan Cheese Biscuits | For Snacking or Cheeseboard

    Savoury biscuits make perfect snacks! We paired sweet apricots, tangy parmesan and buttery pecans for an ultimate biscuit that both lends itself brilliantly to any cheeseboard and tastes great on its own! Simple to make, our Apricot & Pecan Cheese Biscuits will take about 10 minutes to prepare, 30 minutes to chill and another 20 in the oven!

    Both Seb and I have a very special place in our hearts for cheese. When we first met, I was working part-time as a Cheese Specialist at Fortnum & Mason (a famous upmarket store in London). I absolutely loved it – tasting all the best types of cheese of the world and learning something new every day. And I would buy some of the ‘posh’ cheese for Seb to try too. In a way, over the first couple of months of knowing each other, we definitely bonded over our love of cheese!

    Pecan Cheese Biscuits

    Whilst we still use lots of cheese in cooking these days, a cheeseboard is a sign of a very special occasion. But when we have a cheeseboard, we make sure we have it all, including our own home-made biscuits and crackers. So here’s a recipe for one of our favourites: Apricot & Pecan Cheese Biscuits!

    Due to high-fat content in them, these are ridiculously crumbly and ‘melt-in-the-mouth delicious!

    To Make Apricot & Pecan Cheese Biscuits:

    Preheat the oven to 180°C Fan. Line two large baking trays with baking parchment.

    Place flour, smoked paprika, a pinch of salt and butter in a food processor and whizz to breadcrumbs. Add the grated parmesan, apricots and pecans (reserving 3-4 nuts) and pulse to distribute them evenly.

    Pecan Cheese Biscuits

    Add the egg and pulse again. Then tip the mixture onto a worktop and roll into a cylinder about 16cm in length, wrap in clingfilm and chill for at least 30 minutes.

    Cut the biscuit cylinder into 16 slices and place on the 2 trays. Roughly chop the remaining pecans and sprinkle over the biscuits, pressing into the dough slightly. Bake for 15-20 minutes until the edges turn golden brown. Don’t worry if some of the butter leaks out. Allow to cool on the tray for 5 minutes, then transfer the pecan cheese biscuits onto a cooling rack.

    These Apricot & Pecan Cheese Biscuits are perfect served with your cheese board or simply on their own for a quick snack!

      I am biscuit lover whereas my boyfriend doesn’t even look at sweets. So I was happy to discover these cheese biscuits – we were both so happy with these, they quickly disappeared and I am making them again for Easter.
