    Ingredients and Substitutes

    Simple ingredients plus a well-stocked spice cabinet are all that you need to make this recipe. And if you don't have everything at home already, grab the ingredients below at any grocery store:

    • chicken breasts: boneless, skinless.
    • odourless oil: vegetable oil or sunflower oil.
    • spices: garam masala, chilli powder or cayenne pepper, ground coriander (coriander powder), ground cumin, turmeric, garlic powder.

    • Greek yogurt: or natural yogurt, can also be replaced with sour cream or creme fraiche.
    • mayo: full-fat or reduced-fat will work.
    • lime juice: or lemon juice.
    • fresh coriander: can be replaced with parsley or chives.
    • tomato paste: also known as concentrated tomato puree.
    • red peppers: or any bell peppers that you may have.
    • slices of bread: we like seeded or granary bread.

    Variations and Extras

    • Chicken Tikka Sandwiches that you buy in most UK supermarkets are a little sweeter, so make sure to add 1 teaspoon of brown sugar to the creamy dressing to replicate that sweet taste. 
    • If you insist on using fresh garlic coves, be careful not to overdo it. No more than 1 garlic clove should be used to replace ⅛ of garlic powder. 
    • Next time, skip the garlic altogether, and add a teaspoon of ginger garlic paste (or make your own in the food processor by blitzing equal amounts of fresh ginger and garlic).  

    Method: How To Make Chicken Tikka Sandwiches?

    Mix garam masala, chilli powder or cayenne pepper, ground coriander, ground cumin, turmeric and a pinch of salt in a small bowl.

    Cut each chicken breast into two thin slices lengthways. Coat each slice in the spice blend on all sides.

    Heat a tablespoon of oil in a large non-stick frying pan. Add the chicken pieces to the hot pan and cook for 2-3 minutes over medium-high heat on each side until cooked through fully.

    Take them out of the pan, leave the cooked chicken pieces to rest and cool down to room temperature.

    In the meantime, make the dressing by mixing mayo, plain yogurt, tomato paste, coriander, garlic powder, lime juice and finely chopped pepper in a large bowl. 

    Chop the cooked chicken into small pieces and stir the diced chicken into the dressing. Season with salt and black pepper if required.

    Spread the chicken tikka sandwich filler on half of the bread slices, then cover with a second half of bread!

    Tips For Best Results

    • Make sure to slice the chicken into thin pieces to increase the spice coverage, and therefore, flavour. This also makes the cooking process shorter. 
    • Let the chicken rest and cool down before cutting it into small cubes. This step ensures more moisture stays in the chicken. 
    • If you can, leave the chicken marinade in spices for a few hours in the fridge. 
    • Make the dressing ahead of time too, and store it in the fridge to allow the flavours to develop. 

    Storage

    If you are assembling your Chicken Tikka Sandwiches ahead of time, you can wrap them in foil and store them in the fridge for up to 2 days.

    To avoid soggy bread, follow the tips laid out in the FAQ section. The filling itself will keep well for 3-4 days, provided you use fresh ingredients. Simply assemble the sandwiches on the day you wish to eat them. 

    What Else To Use Chicken Tikka Filling For?

    Leftover chicken tikka sandwich filling won't go to waste! There are plenty of ways you can incorporate it into your lunch and dinner recipes, for example:

    • Use it to fill jacket potatoes. 
    • Mix the filler with cooked pasta, some salad veggies (bell peppers, shredded lettuce and red onion) and an extra tablespoon of mayo for a great lunch pasta salad. 
    • Wrap the filling into a tortilla wrap or stuff it into pita bread. 
    • Fill mini vol-au-vents with this sandwich filler for a delicious canape to serve at your party.

    What To Serve With Chicken Tikka Sandwich?

    Chicken Tikka Sandwiches are great on their own, making them a perfect option to take for an office lunch (go easy to the garlic...) or a picnic. However, if you are looking to add something else, consider serving them with a small cup of Lentil and Carrot Soup or Roasted Butternut Squash And Pepper Soup.

    Yes, absolutely, but note that chicken breast meat cooks quicker, so allow for extra cooking time.

    How To Prevent My Chicken Tikka Sandwiches From Getting Soggy?

    If you are planning to make your sandwiches ahead of time, you may want to add a protective layer between the chicken tikka filling and the bread. Simply line both sides of the filling with a large lettuce leaf. Alternatively, spread some unsalted butter on both sides of the bread for extra decadence and to help prevent the moisture from the filling seeping into the bread.

    Ingredients
     
     

    For Chicken Tikka:

    • 300 g chicken breasts boneless, skinless
    • 1 tablespoon odourless oil
    • 1 teaspoon garam masala
    • 1 teaspoon chilli powder or cayenne pepper
    • 1 teaspoon ground cumin
    • 0.5 teaspoon ground coriander
    • 0.25 teaspoon turmeric

    For The Creamy Filling:

    • 60 g Greek yogurt
    • 60 g mayo
    • 1 tablespoon lemon juice
    • 0.25 teaspoon garlic powder
    • 5 g fresh coriander finely chopped
    • 1 tablespoon tomato paste
    • ½ red bell pepper very finely chopped
    • 8 slices bread

    Instructions
     

    • Mix garam masala, chilli powder or cayenne pepper, ground coriander, ground cumin, turmeric and a pinch of salt in a small bowl.
    • Cut each chicken breast into two thin slices lengthways. Coat each slice in the spice blend on all sides.
    • Heat a tablespoon of oil in a large non-stick frying pan. Add the chicken pieces and cook for 2-3 minutes over medium-high heat on each side until cooked through fully.
    • Take the chicken out of the pan, and leave the pieces to rest and cool down.
    • In the meantime, make the dressing by mixing mayo, yogurt, tomato paste, coriander, garlic powder, lime juice and finely chopped pepper.
    • Chop the cooked chicken into small pieces and stir them into the dressing.
    • Spread the chicken tikka filling on half of the slices of bread, then cover with a second half of bread!
