Sticky, salty, sweet and incredibly moist and flaky! We are talking about one of our favourite salmon recipes – Sticky Soy Salmon! Cooked in honey and soy marinade with a dash of orange juice, salmon has an irresistible sweet Asian-style glaze over it that keeps the fish moist and adds heaps of flavour! Oh, and did we mention that you can make it in under 20 minutes?

Ingredients and Substitutes
- honey: choose clear runny honey that hasn’t crystalized.
- soy sauce: light or dark will work just fine. If you’re looking for gluten-free salmon, use Tamari.
- orange juice: ideally freshly squeezed from an orange.
- chilli flakes: you may use finely chopped red chilli. Add some seeds for some extra chilli heat in this sticky salmon glaze.
- olive oil: or any odourless oil suitable for frying.
- salmon fillets: we used fillets with skin on. Cooking times here will be for fillets that are approx 2cm thick.
- garlic clove: very finely chopped or minced.
- orange: slices of orange are used for garnish, so it’s completely optional.
- spring onion: thinly sliced and used for garnish.

Method
In a small bowl, mix honey, soy sauce, finely chopped garlic and chilli flakes. Squeeze orange juice into a separate bowl and mix it with cornflour until no lumps remain. Add the orange juice to the rest of the glaze ingredients and set aside.
Heat a tablespoon of oil in a large frying pan. Once hot, add the salmon fillets skin side up and fry on medium heat for approx. 3 minutes.
Gently flip the salmon fillets over and fry for another 3 minutes.

Stir and pour the soy honey glaze into the pan next to the salmon fillets and let it warm up and thicken slightly for a minute. Baste the salmon with the glaze and carry on cooking for 2 minutes until the sauce has reduced further.


Garnish with spring onion and slices of orange and serve with rice.

Yes! Preheat the oven to 180 C. Arrange salmon fillets on the baking tray skin side down. Pour the sticky salmon glaze over the salmon and bake in the oven for 10-12 minutes. Baste the salmon with the glaze midway through cooking and then again just before serving!
We find that this recipe is actually very forgiving and the glaze keeps your salmon moist even if you slightly overcook it. But of course, if you cooked the fillets for a lot longer than the recipe states, your salmon will dry out.
Another reason for dry salmon is seasoning it too early. We don’t season salmon at all in this recipe, as soy sauce provides enough salt. If you want to season your salmon, don’t season the salmon fillets too early, as the salt will draw out all the moisture. If you must season, do it just before your salmon hits the pan.
Thawed, previously frozen fish may also have a dryer texture.
