    Ingredients and Substitutes

    Here's what you will need to make these delicious Greek Halloumi Wraps. Find the quantities, full instructions and nutritional information in a recipe card at the bottom of the post. 

    • Greek yoghurt: use thick and creamy plain yoghurt. 
    • fresh herbs: we used fresh parsley and mint, but you can experiment with other herbs like coriander (cilantro), chives, dill etc.
    • garlic clove: if you don't like the idea of raw garlic in your halloumi wraps, substitute it with roasted garlic for a milder and sweeter taste. 
    • a pinch of salt and black pepper: to season.
    • halloumi block: both regular and reduced-fat halloumi will work.
    • gem lettuce: can be replaced with iceberg lettuce or baby spinach. 
    • English cucumber: other types of crunchy cucumbers will work just as well. 
    • red onions: if you find raw onion too much to handle, place the thinly sliced onion in a colander and pour a whole kettle of boiling water over the onions. Leave them to cool down, squeeze out any extra moisture and then use them in wraps. 
    • bell pepper: we used a red pepper, but you can use whatever you have. 
    • wheat tortilla wraps: choose large wraps to make sure you can encase the filling properly. We used white tortilla wraps, but whole wheat flour tortilla wraps will work just as well.

    Halloumi is a semi-hard, unripened, brined cheese that originates from Cyprus. Its salty flavor and high melting point make it ideal for frying or grilling, where it turns deliciously golden brown without losing its shape. This characteristic makes halloumi a favourite among cheese lovers and a perfect candidate for our halloumi wrap recipe.

    Step-By-Step Method

    1. Prepare Your Vegetables: Shred the lettuce, thinly sliced red onions, cucumber and red pepper.

    3. Fry the Halloumi: Cut your halloumi into thick slices of sticks. In a non-stick pan over medium-high heat, fry the halloumi sticks until golden brown on all sides.

    Rinsing halloumi before cooking can help reduce its saltiness (we personally enjoy the saltiness and don't rinse the cheese). But if you do, make sure to pat it dry with a kitchen towel before frying.

    Why Do My Tortillas Split When I Roll Halloumi Wraps?

    Tortillas can split if they're too cold or dry. Ensure they're at room temperature and pliable before assembling your wraps. A quick warm-up can make all the difference.

    Ingredients
     

    For Greek Yoghurt Sauce:

    • 180 g (0.9 cups) Greek yoghurt
    • 2 tablespoon parsley finely chopped
    • 2 tablespoon mint finely chopped
    • 1 clove garlic minced
    • a pinch of salt and black pepper

    For Halloumi Wraps:

    • 250 g (9 oz) halloumi cut into 12 sticks
    • 1 little gem lettuce shredded
    • ¼ English cucumber (approx. 100g) sliced into sticks
    • ¼ red onion thinly sliced
    • 1 small bell pepper sliced into sticks
    • 2 wheat tortilla wraps large

    Instructions
     

    • In a small bowl, mix plain Greek yoghurt with finely chopped parsley and mint and minced garlic. Season with salt and black pepper and set the sauce aside for the flavours to mend.
    • Cut the block of halloumi into 12 long sticks.
    • Heat a large non-stick frying pan. Once hot, add the halloumi sticks and fry them on all sides until browned (about 5-6 minutes over high heat).
    • If your tortilla wraps are quite stiff, warm them for 10-20 seconds in a microwave or 1 minute in a warm oven.
    • Spread a generous amount of the yogurt sauce in the centre of each toritilla wrap
    • Spread the shredded lettuce on top.
    • Arrange 6 sticks of halloumi per wrap and top everything with bell pepper, cucumber and red onion.
    • Fold the bottom of the tortilla wrap up and then fold the sides in tightly creating a tight halloumi wrap. Serve with an extra drizzle of yogurt sauce!
