    A Note On Sourdough Discard

    Before we dive in, let's get something straight: sourdough starter discard isn't a leavening agent on its own. Since it's an unfed sourdough starter, you'll usually need a boost from baking soda, baking powder, or sometimes even commercial yeast for best results.

    A cup of discard that's a day or two old is perfect - it's flavourful but not overly acidic. Very old, overly sour discard can make your bakes too tangy and overpowering, so use it wisely.

    The great thing is that discard brings more than just taste. The remaining wild yeast and lactic acid bacteria help reduce phytic acid in flour, giving your breakfast bakes some added health benefits too. Think of discard as the perfect base for quick breads, sourdough muffins, waffles, and more.
