    You've baked sourdough before, so you know that every variable - from dough temperature to rise times - affects the final texture. Here are a few tried-and-true tips for achieving fluffy Sourdough Pumpkin Cinnamon Rolls every time.

    1. Use a bubbly, active sourdough starter
      Your active starter should have doubled in volume and smell slightly sweet before you mix the dough. Avoid a starter that's too acidic - it can tighten the gluten and make the dough dense.
    1. Incorporate pumpkin purée carefully
      Real pumpkin purée (or homemade pumpkin puree) adds moisture and sweetness, but different brands vary in water content. If your dough feels sticky, dust your floured work surface with a touch of bread flour rather than adding too much directly to the dough.
    2. Mix until strong and elastic
      Using a bowl of a stand mixer fitted with a dough hook attachment, mix the dough on low speed until it's fully combined. Then increase to medium and continue kneading until it passes the windowpane test - this step is crucial for creating that signature soft, stretchy crumb.

    1. Be patient with the dough rise
      Because this is an enriched dough with butter, milk, and sugar, it will take longer to rise than standard sourdough bread. Expect the bulk fermentation to take 5-6 hours in a warm spot (or longer in cooler kitchens). Always judge by volume - your dough should nearly double before shaping.
    2. Roll evenly and shape gently
      Roll the dough into a large rectangle using a rolling pin, then spread the spiced butter mixture evenly. Cut the dough into 9 long strips using a pizza wheel (about 4.5 cm wide).     1. Mind your dough temperature
      The dough rise will depend heavily on ambient temperature. Aim for around 24-26°C during bulk fermentation and second rise. Too cold and your dough may not expand properly; too warm and the butter might melt out.
    2. Bake until just golden brown
      Bake the rolls for 28-32 minutes until puffed, glossy, and golden. They should reach an internal temperature of about 93°C when done.

    Why Pour Cream Over Sourdough Pumpkin Cinnamon Rolls?

    Why We Don't Add Cinnamon To The Sourdough Itself

    Cinnamon is magical - but it's also a bit of a gluten killer. Adding ground cinnamon directly to cinnamon roll dough (or any sourdough bread) can interfere with gluten development and slow fermentation.

    That's why it's best used in the filling, swirl, or as a layer of flavour rather than mixed into the dough itself. This ensures your rolls stay soft, pillowy, and perfectly risen instead of dense and sluggish.

    Serving Suggestions

    These Pumpkin Sourdough Cinnamon Rolls are best enjoyed warm from the oven, when the frosting is just beginning to melt into every swirl. Serve them for a cosy weekend brunch or as part of your Thanksgiving breakfast spread.

    They're equally wonderful at room temperature with a cup of coffee or tea. For an extra indulgence, add a small pat of melted butter on top or drizzle with maple syrup.

    Storage and Leftovers

    These rolls are at their very best the next morning - if you manage to have any left!

    • After baking: Freeze leftover baked (unfrosted) rolls for up to 2 months. Thaw and warm before topping with fresh frosting.

    Can I make these with sourdough discard instead of an active starter?

    You can make sourdough discard pumpkin cinnamon rolls, but you'll need to add a small amount of dry active yeast or instant yeast to help them rise. The discard adds flavour but won't provide enough lift on its own.

    My dough feels too sticky. What should I do?

    Pumpkin adds extra moisture, so this is normal. Avoid adding too much flour - instead, lightly flour your work surface and use a bench scraper to manage the dough.

    Why didn't my dough rise enough?

    Check that your active sourdough starter was at its peak and your dough stayed in a warm spot. Cooler kitchens or over-acidic starters can slow down the dough rise.

    Can I cold-proof shaped rolls overnight?

    Yes! After shaping, cover the dish tightly with plastic wrap or a damp towel and refrigerate overnight. The next day, bring them to room temperature before baking - this slow cold fermentation enhances both flavour and texture.

    Equipment

    Ingredients
      

    • 435 g strong bread flour with at least 12% protein content
    • 50 g caster sugar or granulated sugar
    • ½ teaspoon salt
    • 150 g active sourdough starter 100% hydration
    • 100 g pumpkin purée
    • 135 g milk
    • 1 egg large
    • 50 g butter softened

    For The Cinnamon Filling:

    • 120 g light brown sugar
    • 100 g butter softened
    • 1 tablespoon cinnamon
    • 1 tablespoon pumpkin pie spice or more cinnamon

    For Pouring Over:

    • 150 g double cream or heavy cream

    For The Cream Cheese Frosting:

    • 50 g butter softened
    • 100 g cream cheese at room temperature
    • 100 g icing sugar powdered sugar
    • 2-3 tablespoon milk
    • 1 teaspoon vanilla bean paste optional

    Instructions
     

    DAY 1

    • First thing in the morning, feed your sourdough starter in the ratio of 1:1:1 and leave it in a warm spot for 4-5 hours to at least doube in volume.

    Make The Dough:

    • When your sourdough starter is active and bubbly, start making the dough. In the bowl of a stand mixer, combine strong flour, sugar and salt. Add the sourdough starter, pumpkin puree, milk and egg. Mix the dough in your stand mixer, fitted with a dough hook attachment for 4-5 minutes until combined (it does not have to be smooth and elastic at this point).
    • With your stand mixer still running, little by little, add the softened butter. Increase the mixer to medium speed and keep on going for about 10 minutes, or until the dough passes the windowpane test (until you can stretch the dough so thin that you can see through it without tearing it). The dough will be soft, elastic and slightly shiny, but may seem stiffer than usual (that's ok, as we will be adding moisture by pouring over cream before baking).

    Bulk Fermentation + Cold Ferment

    • Tip the dough onto a work surface, shape it into a ball and place it into a large lightly oiled bowl. Cover it with plastic wrap and leave it in a warm place to bulk ferment for 4-6 hours, until it almost doubles in volume.
    • Transfer the bowl to the fridge and leave it to cold ferment overnight (8-16 hours).

    DAY 2

      Filling and Shaping

      • The next morning, in a small bowl, mix the brown sugar, pumpkin pie spice (or mixed spice in the UK) and cinnamon. Melt and cool the butter. Mix it with brown sugar mixture and leave to cool down further. If the butter still splits from the sugar, mix in a teaspoon of flour.
      • Grease a 24x24cm baking dish with butter (alternatively, line the baking tray with a sheet of parchment paper). You will want a dish with high rims so that you can cover the top without the top of the dough touching the cover as the rolls rise.
      • Scoop the dough out of the bowl onto a lightly floured surface. It should be quite firm and not sticky. Using a stainless steel rolling pin (or a floured rolling pin), roll the dough out into a rectangle measuring approx. 42x30cm.
      • Spread the soft spiced butter across the surface of the rolled-out dough, gently pressing it with the back of a spoon.
      • Cut the dough into 9 even long strips, about 4.5 cm (1¾ in). Roll each strip tightly and arrange them in a prepared baking dish.

      Second Proof

      • Cover your unbaked rolls with a lightly oiled cling film and leave the cinnamon rolls for 4-5 hours for their final rise. Choose a warm spot (22-25°C is ideal). If your kitchen is colder, you may need to leave them to rise for longer. Your buns should have bulked up by about 75% when they are ready to bake.
      • Preheat the oven to 180°C
      • Just before baking, pour the cream all over the pumpkin cinnamon rolls - it will soak into the dough and create a soft, caramelised base.

      Baking

      • Place the buns in the centre of the oven for approx 28-32 minutes, until they are golden brown. Once baked, remove them from the oven and leave them to cool down in the tray for 15 minutes, whilst you make the cream cheese frosting.

      Cream Cheese Frosting

      • Place softened butter in a bowl and, using an electric handheld mixer, beat until smooth and fluffy. Add the cream cheese and vanilla bean paste, and beat again. Finally, add the icing sugar, and beat until fully incorporated.
      • Little by little, start adding the milk, and mix until you have a thick but pourable consistency of your cream cheese frosting.
      • Pour the icing on then warm buns. You may want to spread the icing using the back on the spoon on top of your Sourdough Pumpkin Cinnamon rolls.
      • Enjoy the rolls warm or at room temperature. They are at their best on the day they are baked!
